White Chicken Chili

Learn how to make the best winter comfort meal. A soothing soup that can ease the soup and create the perfect cold weather into beautiful warm evening. Easy to be made in huge batches to then freeze for later meals!

Ingredients
- Chicken Broth: Any brand of chicken broth will work just the same.
- Salsa: In this recipe, I use Pace medium salsa, any level of spice will work the same, just depends on your spice tolerance.
- Cheese: Any form of sharp cheddar or colby will work. ex: cheddar, colby jack, etc.
- Chicken: The amount of chicken in this recipe is subject to the cook. I shred anywhere from 2-3 breasts depending on how many people and how much protein I want within the soup/chili.
- Beans: I usually use Bush's great northern beans, I tried this recipe with Meijer great northern beans to be on the cheaper side. I learned one thing, don't cheap out on the beans! Make sure to get Bush's at all costs!
Pro-Tips
- Use two forks to shred the chicken to you wanted size, this recipe will allow whatever sized shredded or not shredded chicken you'd like!
- Shred your own cheese! By shredding your own cheese you can avoid consuming all the plastic and preservatives in pre-shredded cheese.
- If cooking and shredding your own chicken breasts, I recommend oven-roasting at 450 degrees for roughly 15-18 minutes or until the chicken is 165 degrees internally. This will add 15-18 minutes to the cook time.
- When adding everything to the pot, I like to start with the beans, salsa, and chicken broth to create a layer for the cheese and chicken to sit on, it prevents the cheese and chicken from sticking to the bottom while simmering.
Storage
In the fridge: Store in a glass container and it stays good for about a week.
In the freezer: Using a freezer bag, freeze flat for easier storage within the freezer. The chili will stay fresh for roughly 9 months.

- 24 oz Pace medium salsa
- 32 oz chicken broth
- 1/2 lb shredded sharp cheddar
- 1/2 lb shredded colby
- 2-3 chicken breast
- 4 15.8oz Bush's great northern beans
Instructions
1. Add everything to a large pot and simmer until everything is melted and combined.
3. Simple as that! Enjoy!
